Food Hall Design, Jorge Chavez International Airport

Designing a vibrant, legible food hall that elevates passenger experience within a major airport expansion.

Value Delivered

The Food Hall design delivers a coherent, high-capacity dining destination that balances strong architectural identity with operational performance. Clear organization, visual openness, and flexible seating enhance passenger comfort and orientation, while optimized back-of-house planning supports efficient daily operations. The project contributes a distinctive and memorable food experience to the new terminal, reinforcing Jorge Chávez International Airport’s ambition to offer a contemporary, world-class passenger journey.

Project Overview

This project forme part of the major expansion of Jorge Chávez International Airport. Commissioned by Lagardère Travel Retail, with Altavia Travel Retail as partner, 1PAX developed the architectural design for a new 1,800 m² Food Hall serving one of Latin America’s fastest-growing aviation hubs, with a projected capacity of 37.5 million passengers annually. The project positions food and beverage as a central experiential component of the expanded terminal.

Key Challenge

The primary challenge was to design a large-scale food hall capable of handling very high passenger volumes while remaining intuitive, welcoming, and operationally efficient. The space needed to offer diversity and choice without visual or functional congestion, ensure clear orientation, and support seamless back-of-house operations for multiple brands within a constrained airport environment.

Our Approach

1PAX conceived the Food Hall as a clearly structured, panoramic space organized into five distinct zones. The entrance is anchored by Sazón Nation, a strong spatial landmark defined by sculptural, tree-like elements that establish identity and visibility from the outset. From this point, passengers benefit from clear sightlines across all kiosks, arranged to showcase a diverse culinary offer and supported by legible directional signage.

A generous general seating area was designed to accommodate varied user preferences and dwell times, offering a mix of seating typologies and ambiances. Five branded kiosks—KO Asian Kitchen, La Lucha, Las Reyes, Burger Boy, and Tori—are supported by a carefully planned shared back-of-house, ensuring efficient logistics, servicing, and operational continuity.
